Located in the heart of one of the fastest growing neighborhoods in Langley, The Butcher is excited to open its premier location at 8045 204th - part of the Yorkson Village complex in the Willoughby Slope area. As residents of Willoughby themselves, Kai and Heather often talked over the years while making dinner for their family, about how what the neighborhood was missing was a great butcher shop that sold quality, local, and sustainable products for an affordable price. With the help of their long-time friend and colleague Jeevan, the 3 spent many long nights dreaming up just that.
Working with local farmers from around the Fraser Valley, the Butcher is proud to offer locally and ethically raised meats for a true farm to table experience right in your own home. We have worked hard to make sure that most of our products come from local pastures, so that you truly know where what you are eating comes from. We offer a wide selection of fresh meats daily at our butcher counter, sandwiches soups and salads from the deli counter, and ready-made take home meals in our freezer section. What sets us apart from everyone else is that not only does our head butcher have a wide variety of experience in butchery and sausage making, but our owners also have vast chef backgrounds working in restaurants, hotels, and you’ve got it – butcher shops!
The Butcher also offers bundle meat packs, a wide selection of house made charcuterie, custom cutting, game cutting during hunting season, and the option to have us come to your farm and put down/process your animal for you, making us the one stop shop for all your butchery needs. Kai has cut meat as a butcher for over 10 years and has been head butcher/store manager at prominant butcher shops in both Vancouver and the Fraser Valley. Kai also spent some time working at a high-end sausage making company where he picked up a strong love and a skill set to match for house-made charcuteries. Over the years Kai has perfected his custom cutting and whole animal butchery which also makes us a great choice to bring your animals to come hunting season. Prior to Butchery Kai worked in the Vancouver food scene for 10+ years which included being named executive chef at hotels and busy restaurants, fine dining restaurants, and he even had the honour of being named runner up for Best Chef in Vancouver! Kai dreams of owning a farm right here in the Fraser Valley one day so that he can complete the whole cycle of raising animals, preparing the meat, and selling it to the community. This dream is what propelled Kai to make the switch from cooking to cutting, and every day it reinforces his respect for simple, local, quality ingredients.
Jeevan comes to the table with 15+ years of restaurant experience, including but not limited to hotels, cafes, butcher shops, and even owning and running his own successful pizza shop in Beaumont Alberta. This widespread variety of both hands-on cooking/cutting experience, and multiple managerial roles gives Jeevan a unique level of expertise where he is comfortable and at home tackling any of the needs our customers may have. Born in the Philippines to Indian parents and growing up in Vancouver Jeevan has grown up with many different foods and cultures, and to Jeevan food IS culture. Jeevan truly believes it is very important that we know where our food comes from and he is so excited to share his appreciation for healthy local ingredients with you all. He promises everything that goes out our doors will be of the utmost quality.
As both a local to the neighbourhood and a working mom, Heather knows how busy life can be and how much we needed something in our area to help bring quick but healthy meals to our tables. With over 20 years experience in the food industry (as a cook, chef, pastry chef, butcher) Heather is passionate about creating a great take home heat and serve ready made meal program at The Butcher with food that is not only restaurant quality, but still affordable for everyday families. Spending her childhood on Vancouver Island gave Heather a real appreciation for the farm to table experience and she is using that knowledge and experience to ensure our products are created from scratch using some of the freshest local bountry our area has to offer. Heathers wide array of experience in all things food guarantees everything from our pot pie crusts, to our beef tenderloin steaks are prepared with the utmost expertise and care. Most days youll find Heather behind the deli counter so please pop in and say Hello!
We will come out to your farm or location. Once there we will put your animal down using a humane method to make it quick and painless for your animal.
Once we have harvested your animal at your location, we will bring it back to the shop to hang in our cooler where we will age your animals for a set number of days.
Now that your animal has been processed and thoroughly frozen for 1-2 days, it’s ready to come home! You will receive a phone call from our office letting you know that your meat is ready and what the total is for the butcher fees.
